Finding authentic Bahamian cuisine is never a problem on The Abaco Islands. Whether it’s a Conch (pronounced "conk") Salad, the Bahamian "rock lobster" or a fresh bowl of pea soup with dumplings, you’re sure to get a great taste of the local fare. But if you are still craving a burger and fries -- any one of our many restaurants can satisfy your needs.

When dining out in The Abaco Islands, you’ll find the local food to be fresh and reasonably priced. Seafood is the staple of the Bahamian diet, and is usually accompanied by the famous Caribbean dish -- peas ’n rice.

The Bahamians add lots and lots of hot pepper when they cook for themselves, but they don't usually serve it to the guests in the restaurants, unless it's requested. You will frequently see a West Indies hot sauce on the table along with various brands of Louisiana hot sauce. Be especially careful of the West Indies hot sauce!

Crawfish is generally prepared somewhat similar to lobster. Grouper is clearly the favorite fish throughout all of Abaco. It has tender white meat and you'll see it on all the menus.

In the days before refrigeration, Abaco people "corned" their fish to preserve them. Some old timers still do. The fish are scaled, gutted, scored, and salted. They are then dried in the sun for 6 to 15 hours depending on size.

The Bahamian refresher of choice is coconut water (not the heavier, fattier coconut milk) blended with sweet milk and gin. There is also a drink called Switcher, made with native limes; those who have had it swear that it tastes better than any other citrus drink.
